Chocolate & Beetroot Brownies Recipe

180g plain flour, 4 eggs, 80g cocoa powder, 2g baking powder, 250g caster sugar,

2 tsp vanilla essence, 250g pureed cooked beetroot, 200ml vegetable oil

METHOD

preheat oven to 180c

mix flour, cocoa, baking powder and sugar in a large bowl

add beetroot and mix in eggs one at a time

add oil and vanilla and mix well

bake for 30 minutes

leave to cool in tin and cut into squares
